The City Block Salumeria team is one of the strongest culinary teams in the Mid South. Led by Head Butcher Brad McCarley, this team is educated, dedicated, hard working, and brings years of experience from restaurants around the country.

Brad McCarley, Head Butcher: 

  • Bachelor of Arts in Psychology from the University of Arizona
  • Master of Arts in Educational Psychology from Minnesota State University
  • Ten years as an instructor and program supervisor for the National Outdoor Leadership School
  • Studied under French Master Butcher Marc Pauvert
  • Twenty years of professional experience as a cook and chef in Tennessee, North Carolina, Arizona, Wyoming, and Utah
  • Former Head Butcher at Porcellino’s Craft Butcher in Memphis

Kathryn Zawisza, Shop Manager

  • Bachelor of Arts in Hospitality Business and Spanish from Michigan State University
